The patented process soaks de-shelled and roasted peanuts in a solution of food-grade enzymes to reduce peanut allergens by up to 98%. No word yet on when these hypoallergenic peanuts could appear on store shelves, but some worry that even a small amount of the allergenic proteins in peanuts could trigger a severe allergic reaction.
